The Ingredients For White Christmas

  • white chocolate - because this is the main ingredient in this recipe, it's important to use a good quality white chocolate (such as Cadbury, Whittakers, Hersheys, Lindt or Nestle)... trust me - a good quality chocolate makes ALL the difference!! I recommend using cooking chocolate or chocolate melts as they melt the easiest.
  • dried cranberries - also known as craisins. These can be purchased from the dried fruit section of your supermarket.
  • toasted slivered almonds - you can buy raw slivered almonds and toast them in a frying pan over low heat on the stovetop, or you can purchase pre-toasted slivered almonds.
  • sultanas
  • desiccated coconut - this is a fine coconut that can be purchased in packets from the supermarket.
  • rice bubbles - or you can use any brand of puffed rice such as Rice Krispies.

10 Minute Melt & Mix Recipe

It couldn't be easier to make this recipe...

Simply melt and white chocolate and stir through the add-ins! Too easy, right!?

Let me walk you through the simple steps:

Step 1 - Melt The Chocolate

You can do this step in the microwave or Thermomix (as per my instructions below) or in a double boiler on the stovetop.

Step 2 - Add The Remaining Ingredients

Add all the remaining ingredients and stir to combine until all of the dried fruits, nuts and Rice Bubbles are coated with the melted chocolate.

Step 3 - Press Into Tin

Press the mixture firmly into the prepared baking tin and chill in the fridge.

Substitutions

This is an incredibly versatile recipe, so you can change things up to suit your taste preference:

  • toasted slivered almonds can be substituted with pistachios, macadamias or roasted almonds
  • sultanas can be substituted with raisins (or left out if preferred)
  • dried cranberries and sultanas can be substituted with mixed dried fruit
  • you can use any brand of puffed rice in place of the Rice Bubbles

Tips

  • you can melt the chocolate in the microwave (see my tips here), in a Thermomix, or on a double boiler on the stovetop
  • you can make this slice up to 1 week ahead of time and store it in an airtight container in the fridge

FAQ

Can I use dark or milk chocolate?

While White Christmas is traditionally made with white chocolate, you can substitute it with milk or dark chocolate if you prefer.

Can this be added to food hampers at Christmas?

Absolutely! As long as you don't live in a super hot climate, my White Christmas recipe will be fine being stored at room temperature in a hamper.

Can kids make this recipe?

This is a fantastic recipe for kids to make! You will need to assist younger children with melting the chocolate, but apart from that, this is a great recipe for your little ones to make on their own!

Ingredients

  • 500 g white chocolate
  • 1 ½ cups (45g) Rice Bubbles or any puffed rice
  • 160 g dried cranberries (craisins)
  • 140 g sultanas
  • 120 g slivered almonds toasted
  • 1 cup (90g) desiccated coconut

Instructions

Conventional Method

  • Grease and line a 20cm x 28cm rectangular slice tin and set aside.

  • Melt the white chocolate in a large microwave-safe bowl (on 50% power for 3-4 minutes or until melted - stir every 30 seconds).

  • Add the Rice Bubbles, dried cranberries, sultanas, slivered almonds and desiccated coconut and stir to combine.

  • Spoon into the prepared tin and press down firmly.

  • Place into the fridge for 3-4 hours (preferably overnight) before cutting into slices.

  • Store in an airtight container in the fridge for up to 1 week.

Thermomix Method

  • Grease and line a 20cm x 28cm rectangular slice tin and set aside.

  • Place the white chocolate into a clean and dry Thermomix bowl. Melt for 3-4 minutes, 80 degrees, Speed 2.

  • Add the Rice Bubbles, dried cranberries, sultanas, slivered almonds and desiccated coconut and mix on Reverse, Speed 2 until combined (you'll need to use the spatula to help mix).

  • Spoon into the prepared tin and press down firmly.Place into the fridge for 3-4 hours (preferably overnight) before cutting into slices.

  • Store in an airtight container in the fridge for up to 1 week.
