Indian palak gravy has a natural dark green colour, and a medium spicy taste because of the combination of ingredients like green chillies and curds. It is best to blanch and then use the spinach so that it maintains the bright green colour. Once blanched, cool and blend to a smooth paste, and then use as a base for the gravy. 2 tbsp freshly grated coconut
2 tbsp chopped cashew nut (kaju)
2 tbsp poppy seeds (khus-khus)
2 tbsp roughly chopped garlic (lehsun)
1 tbsp roughly chopped green chillies
1 tsp chopped ginger (adrak)
2 tsp aniseeds (vilayati saunf)
salt to taste

3 tbsp oil
1/3 cup beaten fresh curd (dahi)
4 cups chopped spinach (palak) , blanched and puréed
1 tsp sugar

- Chop them using a sharp knife.
- Boil plenty of water in a deep pan.

- Add 1 tspginger (adrak).
- Add2 tspaniseeds.
- Add salt to taste.
- Add ½ cup water.
- Blend till smooth. Keep aside.

- Heat 3 tbspoilin a deep pan.
- Add the prepared paste.
- Sauté on a medium flame for 3 to 4 minutes.
- Add 1/3 cupbeaten freshcurds (dahi).
- Mix well and cook on a slow flame for a minute, while stirring continuously.
- Add the spinach purée.
- Add 1 tspsugar.
- Add the salt.
- Mix well and cook for another 2 minutes, while stirring once in between.

This spinach gravy is very tasty and taste really good. I add mixed vegetables or paneer and other masalas to make this recipe and my family loves it...
